Thai Style Spicy Steamed Chicken

Ingredients

700 gm chicken pieces

For the spice paste

4 cloves garlic

2 stalks lemongrass, chopped

3 kafir lime leaves, shredded

1 inch galangal

1 inch ginger

6 bird’s eye chilis

3 small onions

4 dried chilis

2 tbs chopped coriander roots

For the sauce

1 tbs oyster sauce

1 tbs fish sauce

1 tbs plum sauce

½ tbs sugar

Salt and pepper to taste

1 tbs sesame oil

coriander leaves to serve

For steaming

1 stalk lemon grass

2 kaffir lime leaves

Method

1. Blend all the ingredients for the spice paste.

2. Marinade chicken pieces with the spice paste for about 15 minutes.

3. Bring water in a steamer to a boil and add 1 stalk of lemon grass and 2 kaffir lime leaves.

4. Combine the ingredients for the sauce.

5. Place marinated chicken in a bowl and mix in the sauce.

6. Scatter more kaffir lime leaves if desired and steam until the chicken pieces are cooked through.

7. Serve hot.
