Black Sesame Broth
A sweet ending to a festive feast. This classic black sesame broth is a beloved Chinese dessert, rich in flavor and full of nourishing goodness. Traditionally thick and smooth, its deep, nutty taste symbolizes strength and longevity - perfect for ringing in the New Year. For those seeking indulgence, a touch of coconut cream adds extra creaminess, while a water-based version offers a lighter, healthier option without compromising on its comforting essence. Delicious on its own or paired with hot fried Chinese Crullers or Yu Char Kway.
Ingredients
1 cup black sesame seed
2 tbs rice flour
2 tbs glutinous rice flour
3-4 tbs honey or sugar
3 cups water or coconut milk or cream
Method
1. Toast the sesame seeds for about 5 minutes.
2. Put in a spice grinder and grind until a powder consistency is attained. Do not over-grind or it will turn into a paste.
3. In a saucepan, add water, sesame seed powder, rice flour and glutinous rice flour and bring to a gentle simmer over low heat.
4. Stir continuously to prevent the mixture from burning.
5. Add honey or sugar and simmer for 10 minutes. The mixture will thicken. If it is too thick, add more water.
6. Remove from heat and ladle into small bowls and serve hot.
