Christmas Chocolate Cupcakes with Mint Frosting

Ingredients
For the cupcakes
142 gm bittersweet chocolate, finely chopped
28 gm cocoa powder
1/2 cup boiling water
95 gm all-purpose flour
100 gm granulated sugar
100 gm packed light brown sugar
1/2 tsp salt
1/2 tsp baking soda
113 gm sour cream or plain yogurt, at room temperature
1/4 cup vegetable oil
2 large eggs plus one egg yolk, at room temperature
2 tsp white vinegar
1 tsp vanilla extract
For the mint frosting
375 gm powdered sugar, sifted
227 gm unsalted butter, at room temperature
1/4 tsp fine salt
1/2 tsp peppermint extract
1 to 2 tbs heavy cream
Green gel food colouring
Sprinkles to garnish
Method
1. Make the cupcakes:
2. Preheat the oven to 177C. Line a standard 12-cup muffin tin with paper liners.
3. Combine the chocolate and cocoa powder and add in the boiling water. Cover and let stand for 5 minutes. After 5 minutes, whisk gently until smooth set aside to cool.
4. Combine the flour, sugars, salt, and baking soda.
5. Whisk the sour cream, oil, eggs, egg yolk, vinegar, and peppermint extract into the cooled chocolate mixture until smooth. Stir in the flour mixture but do not overmix.
6. Pour the batter into prepared muffin tins.
7. Bake for about 20 minutes until cupcakes are set. Set aside to cool.
8. Make the frosting: Whisk the sugar and butter on low speed for about 2 minutes. Then increase the speed to medium and whisk for about another 3 minutes until smooth.
9. Add the salt, peppermint extract, and cream and beat on medium for another minute until light and creamy. Beat in green food colouring.
10. Pour frosting into a piping bag fitted with a decorative tip and pipe onto each cupcake.
11. Decorate with sprinkles to make the frosting look like Christmas trees.
12. You can serve right away or store in an airtight container at room temperature for 1 day. They can be stored in the fridge for up to 3 days.
