Creamy Protein-packed Butter Beans
This creamy butter beans simmered in a luscious tomato sauce is so simple yet satisfying. It is packed with plant-based protein, perfect for a vegan treat. I have reduced the cooking and preparation time which is great for all you busy people.
Ingredients
1 can Butter Beans, drained
1 can chopped tomatoes
2 garlic cloves, sliced
½ onion, sliced
¼ cup almonds, soaked in hot water for 20 mins, drained
½ tsp Italian herbs
1 tsp paprika
½ tsp sugar
1/3 cup broth
Pinch of salt & black pepper
1 tbs olive oil
Method
1. Saute garlic & onion in olive oil till translucent.
2. Mix with canned tomatoes and almonds and blend until smooth.
3. Pour blended mixture into a pot and bring to a boil.
4. Add stock, paprika, herbs, sugar, salt and pepper. Bring to a boil
5. Stir in butter beans and simmer for 15 minutes until thick and creamy.
6. Done!
