Beef Curry Noodles

A hot bowl of spicy steaming goodness is always a welcome treat on a cold, rainy night. This is a super tasty bowl of spicy noodles which takes a little bit of patience to prepare. But the result is worth the effort.

Ingredients

For the gravy

Beef

2 big onions (minced)

2 garlic (minced)

2 tbs dried shrimps (minced)

10 dried chillies (ground)

1 lemon grass (smashed)

4 tbs curry powder (make it into a paste with some water)

2 tbs chilli powder (make it into a paste with some water)

1 cup coconut milk

1 cup water

1 chicken stock cube

Other ingredients

Some fresh yellow noodles (scalded in boiling water and set aside)

Beansprout (scalded)

Fish balls (fried)

Fish cakes (fried, sliced)

Tofu (fry until brown and slice thinly)

Hard boiled eggs (halved)

Sliced red chillis to serve (optional)

Fried fritters to serve (optional)

Method

1. Heat some vegetable oil and stir fry the lemon grass, and add the onions, garlic, dried chillies. Fry for about 3-4 minutes before stirring
in the curry powder and chilli powder.

2. Stir in the beef or chicken and stir fry for another 2 minutes before adding the coconut milk, stock cube and water. Season with salt once
the meat is tender.

3. To serve, place some noodles and beansprouts in a bowl, add in fish balls, fish cakes, tofu, eggs. Pour some gravy over the ingredients.

4. Top with eggs, sliced red chilli, and fritters (optional).
