Curry Baked Prawns

8-10 large prawns (trimmed and deveined)
3 tbs seafood curry powder
1 medium sized onion
4 cloves garlic
1 stalks lemon grass
1 in ginger
1 in galangal
1 tsp turmeric powder
100 ml coconut cream
2 kafir lime leaves
Salt and pepper to taste
Sliced cucumber and lime wedges to serve


1. Blend until fine, onion, garlic, galangal, ginger and lemon grass.

2. Heat some vegetable oil in a skillet and stir fry the spice paste for 3-4 minutes.

3. Add some water into the curry powder to make a paste.

4. Stir in curry paste into the skillet and stir fry for another 2-3 minutes.

5. Season with salt and pepper, add the coconut cream and kaffir lime leaves.

6. Set aside.

7. Meanwhile, preheat oven at 180 C.

8. place a large piece of banana leave on an aluminium foil.

9. Spread half of the cooked spice past on one half of the banana leave.

10. Arrange the prawns on the spice paste.

11. Spread the remaining spice paste on the prawns.

12. Fold over the banana leave to cover the prawns. Then wrap the aluminium foil over the banana leave and bake in the oven for 15-20 minutes.

13. Alternatively, you can cook it over a skillet on the stove. Use low heat.

14. Serve with sliced cucumber and lime wedges.
