Healthy Sweet Potato Latkes with Grilled Tofu

Crispy, golden, and packed with goodness. These healthy purple sweet potato latkes are served with smoky grilled tofu, homemade apple jam, and a creamy cilantro tahini dressing. You can either deep fry them for extra crispiness or pan fry and even bake them for a healthier version. You can eat them with any of your favorite fillings or toppings.

Ingredients

700 gm sweet potatoes (about 4 to 5 medium sweet potatoes)

½ medium yellow onion

¼ cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp paprika

1 tsp salt

¼ tsp black pepper

Oil for frying

Topping

1 block hard Tofu

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 tsp salt

1 tsp black pepper

4 tbs cornflour

Cilantro tahini dressing

homemade apple jam (optional)

blueberry compote (optional)

Method

1. Peel the sweet potatoes and onion.

2. Shred both in a food processor or you can use a box grater.

3. Using a kitchen towel, wring out as much excess liquid as you can from the shredded sweet potatoes and onions.

4. Add the flour, eggs, garlic powder, salt, and pepper and mix.

5. Use a ¼ cup and scoop the latke mixture to make thin discs.

6. You can fry the latkes in a skillet with ½ inch of cooking oil (this will make crispy latkes). For a healthier version, you can place them on a parchment paper-lined baking tray, spray them with some cooking oil and bake. For an easier alternative, I spray a skillet with some olive oil and pan fry the latkes.

7. Fry until cooked through and browned on both sides, 3 to 4 more minutes.

8. Slice the tofu and marinade with the paprika, garlic and onion powder, salt and black pepper.

9. Mix the sliced tofu with cornflour and grill until crispy.

10. Serve the latkes with grilled tofu and top with homemade cilantro tahini dressing.
