Healthy Vegan Oats & Carrots Muffins
These naturally sweet, plant-based muffins are a nourishing treat made with wholesome oats, freshly grated carrots, crisp apples, and a touch of warm spice. Chopped dried apricots and raisins add a natural sweetness, making them completely free from refined sugar. Soft, moist, and full of flavor, they’re perfect for a healthy breakfast, snack, or guilt-free dessert.
Ingredients
200 gm rolled oats, chopped in a blender or food processor
1 tsp baking powder
1 tsp cinnamon powder
240 ml plant-based milk of choice
1 carrot, grated
1 apple, grated
10 dried apricots, chopped
5 tbs raisins
Method
1. Combine the oats, baking powder and cinnamon in a large bowl.
2. Pour in the milk and stir until well-combined.
3. Fold in the grated carrot and apple, raisins and apricots.
4. Scoop into a greased muffin tin.
5. Bake in a preheated oven at 180C for 20-25 minutes, until the top is golden.
6. Let the muffins cool in the tin before removing them.
