Lamb Curry
A rich and scrumptious curry to wow your guests. This goes well with any types of bread, Puri, Chapati or even plain steamed Basmathi rice.
Ingredients
900gm – 1kg Lamb (leg or shoulder, cut into cubes)
4 Garlic (minced)
2 tbsp Ginger (grated)
3 cups Onions (minced)
1 cup Tomatoes (chopped)
2 Potatoes (cubed)
180 ml Yogurt
½ tsp Black pepper
Lime leaves or coriander leaves
Dry Spices
1 Cinnamon stick
4 Cloves
8 Green cardamoms
Spice Mix
2 tbsp Coriander powder
¾ tbsp Cumin powder
¼ tsp Turmeric powder
½ tsp Garam masala powder
2 tbs Chilli Powder
Method
1) Heat up some vegetable oil and stir fry the dry spices.
2) Add the garlic, ginger and onions.
3) Stir in the lamb and stir fry for 2-3 minutes.
4) Add in the pepper and the spice mix. Add a little bit of water, and simmer for an hour or more. Add in the potatoes and cook till they are soft.
5) Stir in the tomatoes, yoghurt and salt.
6) Serve topped coriander leaves or lime leaves.
