Longevity Hand-Pulled Noodles Served with Minced Pork Sauce & Chili Oil
Longevity noodles, pulled by hand and served with savoury minced pork gravy, spicy chili oil, fried garlic and hearty pork chops - a comforting bowl to welcome prosperity and long life this Lunar New Year.
Longevity Hand-Pulled Noodles Served with Minced Pork Sauce & Chili Oil
Ingredients for the noodles
390 gm flour
½ tsp baking soda
1 tsp salt
240 gm warm water
oil, for brushing
chili oil, for serving
minced pork sauce, for serving (optional)
sliced spring onions, for serving
Chinese-style Pork Chops for serving (optional)
Method
1. Mix baking soda and salt in the warm water.
2. Then combine with the flour.
3. Mix until a shaggy dough forms.
4. Then knead by hand or on medium speed in a stand mixer with the dough hook.
5. Knead until the dough is smooth and slightly elastic but still stiff. This will take about 8 to 10 minutes.
6. Cover the dough and let it rest for at least 30 minutes or longer.
7. When the dough has rested, divide it into 3 equal parts.
8. Roll them out into long skinny ovals, about 12 inches long by 3 inches wide.
9. Brush on both sides with a thin even layer of oil. Cover and let sit for 1 hour.
10. Shape the noodles. Cut each piece of dough into seven 2-inch-wide strips.
11. Then gently pull the ends of each strip to create one long noodle. You can slap it on the counter a couple of times as you pull to help it stretch.
12. Place them on a baking sheet, keeping them separated.
13. Bring a pot of salted water to a boil. Boil the noodles in 2 or 3 batches for about 2 minutes each. They will opaque and bouncy when done.
14. To serve, mix the noodles with some homemade minced pork gravy and chili oil.
15. Top with spring onions and sliced pork chops, optional.
