Melted Snowmen Cookies
These melted snowman cookies are a whimsical and delicious treat that’s perfect for the holiday season. Made with soft sugar cookies as the base, each one is topped with a blanket of sweet white icing to resemble a snowman who couldn’t quite survive the warmth. A marshmallow serves as the snowman’s head, with fun decorations like mini chocolate chips, edible markers, or candy pieces bringing their personalities to life. Ingredients
For the Sugar Cookies
226 gm unsalted butter softened
200 gm caster sugar
1 ½ teaspoons vanilla extract
1 large egg
315 gm plain flour
¾ teaspoon baking powder
¾ teaspoon salt
Method
1. Whisk butter and sugar until creamy.
2. Add egg and vanilla extract and beat again.
3. Combine flour, baking powder, and salt in a separate bowl.
4. Gradually, mix the flour mixture into the wet ingredients. This will be a sticky dough.
5. Wrap the dough in cling film and chill for 2 to 3 hours or overnight.
6. Preheat oven to 175 C and line a baking pan with parchment.
7. Flour your working surface and roll out the chilled dough into ¼ inch thick. (If you want crispier cookies, roll it thinner.) (If the dough cracks, leave the dough to rest for 10-15 mins out of the fridge)
8. Use cookie cutters to cut out shapes. Place onto prepared baking sheet, making sure cookies are at least 1 inch apart. (If you are not intending to decorate your cookies with icing, you can decorate them with sanding sugar at this point before you bake them.)
9. Bake for 8-10 minutes or until the edges turn lightly golden brown.
10. Allow cookies to cool completely before decorating.
Super Easy Icing
1. Combine 3 cups icing sugar with 2-4 tbs milk, 2 tbs light corn syrup and ½ tsp vanilla extract. If frosting is too thick, add more milk.
2. Spread icing onto each cookie, allowing icing to drip over edges to look like melting snow.
3. Place 1 marshmallow onto a greased plate and microwave until it puffs up, about 20 seconds.
4. Immediately place the marshmallow on the edge of 1 cookie while the icing is still wet to look like a melted snowman. Repeat with remaining marshmallows and iced cookies.
5. Pipe twig-like arms using black decorating gel on the icing. Using the same gel, make eyes and a mouth on the marshmallow. For a carrot nose, use orange gel. Make coat buttons by arranging silver sprinkles or M&Ms in the middle of the icing. Use red or green gel for the scarves.
6. Allow cookies to fully dry.
