Roti Jala Pandan (Fluffy Crepe-like Net Pancakes)
These soft lacy, crepe-like net pancakes known as Roti Jala are a Malay traditional dish. They are made from a simple batter of eggs, coconut milk or evaporated milk and flour. A pinch of turmeric powder is usually added to the batter to give these pancakes a bright yellow hue. My version comes with a vibrant green colour from the use of pandan leaves which gives a nice grassy vanilla and coconuty aroma to the pancakes. Serve them with thick and creamy meat or lentil curry.
Ingredients
2 cups flour
1 egg
1/2 cup evaporated milk
2 cups water
¼ cup pandan juice
½ tsp salt
Method
1. Whisk milk, water, flour, pandan juice and salt until smooth.
2. Strain the batter through a fine sieve into a measuring jug to remove all lumps.
3. Pour the sieved batter into a squeeze bottle with tiny spouts.
4. Lightly grease a skillet on low heat.
5. Squeeze the bottle of batter to create net-like strips on the skillet.
6. Let the crepe cook which is about a minute.
7. Gently transfer the crepe onto a large plate and roll it up like making spring rolls.
8. Repeat with the remaining batter.
9. Serve with your curry of choice.
