Steamed Pomfret Hong Kong Style
Fish dishes are important to Chinese cuisines especially during festive occasions, celebratory events and Chinese New Year reunion dinner. This is because fish symbolizes abundance. Among all the fish dishes, steamed fish is the most popular because it retains the natural taste of the fish. Paired with soy sauce, ginger, and scallions, it’s a simple yet elegant way to honor tradition and share good fortune with loved ones. Here’s to a year of smooth sailing and endless blessings.
Ingredients
1 medium sized Pomfret
2 stalks scallions, julienned
2 tbsp cooking oil
1 inch ginger, sliced
1 inch ginger, julienned
salt
Seasoning:
3 tbs light soy sauce
6 tbs Water
½ tsp sugar
For garnishing
Scallions, fried julienned ginger
Method
1. Combine the soy sauce, salt, sugar and water into a small bowl and mix well. Set aside.
2. Rinse fish and rub some salt on all sides.
3. Put some julienned ginger into the stomach area of the fish.
4. Place one third of the scallions & some ginger slices on the base of a steaming plate.
5. Lay fish on top of the scallions and ginger. Sprinkle the rest of the julienned ginger on top of the fish.
6. Heat a steamer. Place fish on the steaming rack.
7. Cover and steam for 10 minutes. Check for doneness by using a fork.
8. Heat cooking oil in a skillet and sautesome scallions for about 30 seconds.
9. Stir in the seasoning mixture into the pan and bring to boil.
10. Remove from heat.
11. Discard the excess liquid from the steamed fish.
12. Pour the sauce over the steamed fish.
13. Garnish with scallions and fried julienned ginger.
14. Serve immediately.
