Super Moist Banana Avocado Chocolate Chip Loaf

To me, cakes take the cake when it comes to dessert. Especially, when they are super moist. I added an avocado into my recipe for two reasons – one is to make the cake extra moist and the other is to reduce the sweetness from the bananas without affecting the texture of the cake.

Ingredients

1 cup ripe and mashed banana

1 avocado (mashed)

1/2 cup packed light brown sugar

1/2 cup castor sugar

1/2 cup butter, melted

2 large eggs

1 tsp vanilla extract

1/2 cup yogurt

1 1/3 cups all-purpose flour

1 tsp baking soda

1/2 tsp salt

3/4 cup mini chocolate chips

Method

1. Preheat your oven to 165°C and grease and line a 9×5 loaf pan with parchment paper.

2. Whisk together the flour, baking soda, and salt.

3. In a separate bowl, whisk the melted butter and both types of sugars for 2 minutes.

4. until you reach a paste-like consistency.

5. Add in the mashed bananas and avocado, followed by the eggs, yogurt, and vanilla.

6. Fold in the chocolate chips.

7. Pour the batter into the loaf pan and bake for about 1 hour and 15 minutes or until a toothpick comes out with a few moist crumbs.
